North Stars Sirius 31 Year Old

Nose: Bright and fresh. Up front are notes of green apple, honeydew melon, and unripe banana. I also get butter cookies, marzipan, and citrus oil (leaning toward mandarin orange). Time reveals vanilla icing and hints of old leather. It’s softly sweet.


Palate: Sweeter than I’d expected from the nose, with a slightly creamy mouthfeel. Honey, hazelnut chocolate, hot cocoa, and apricot.


Finish: Medium-to-long finish, with a balanced mix of sweetness, bitterness, and a gentle burn.


Final Thought: For an old whisky, it is unexpectedly fresh. The sweet notes, along with the low cask-strength, make this whisky very approachable. Although I find the nose more complex than the taste, the flavors do hold up over time and offer that classic Scotch appeal. Personally, I think the price is too steep for the taste but reasonable for the age. On that note, this would be a great gift if you want to impress someone. I mean, who wouldn’t go 😍😍😍 for a 31-year-old whisky?!
